The picnic roast is the lower portion of the pork shoulder. The relatively lean, long green muscle is surrounded by a thick and flavorful fat cap. This meat should be cooked low and slow and the results will be fork tender.
We recommend slow roasting, brazing, or smoking your picnic roast. This cut should be cooked until the internal temperature is 185°. Either way, all that our pasture-raised pork needs to enhance its rich flavor is your favorite spice rub or a bit of barbecue sauce.
Each package of Plumb Rocky Farm picnic roast weighs approximately 2- 3/4 pounds which will make enough pork to serve 6 to 8 people.
