Our superior quality bone-in pork chops are cut 1-1/4 " thick from the midsection of the hog. Ossabaw Island Park has an especially thick and flavorful fat cap that keeps the meat nice and juicy and tastes fantastic.
These Chops are best cooked over medium-high heat on the grill or in a skillet. They need only salt and pepper to enhance their natural flavor.
For best results, cook the chop and its own fat! Slice a small portion of the fat cap into tiny pieces and place them in the pan to render down some of the amazing pork fat to cook in. Chops should be cooked to an internal temperature of roughly 145 degrees Fahrenheit, Serve with your favorite fresh vegetables.
