The shank is the lower portion of the lamb leg. It consists of a long bone surrounded by lean meat and connective tissue. The muscles are highly used, which means that this cut needs a low and slow cook to become tender.

Lamb shanks should be braised for optimal texture and flavor. We love a classic red wine and tomato-based braise, but also sometimes experiment with Indian curries and warm Moroccan spices. The mild flavor of our lamb seems to complement any spice mixture. 


Each package of Plumb Rocky Farm Lamb Shanks weighs roughly a pound and a half and contains two shanks which is enough for two people.
