Fresh ground pork is a mix of leg, shoulder, and trim from the loin. We have a high meat-to-fat ratio for a more lean ground. our pasture-raised ground pork is lean yet flavorful. Ossabaw Island Pork has super unsaturated fat. This type of fat is an integral part of our diet. It is smooth like butter and even the lard is softer at room temperature than other pork lard.
