Skirt steak is cut from the mid section of the veal. It’s a long, thin, flat steak with a thick grain. The meat is well marbled and full of flavor and protein. 


This steak cooks super quickly, which makes it the perfect weeknight steak. Don’t sacrifice health and flavor just because your schedule is busy! 


Marinate veal skirt steak before cooking it hot and fast to lock in the juices. We recommend using a grill or a cast-iron skillet and keeping a close eye on the meat to make sure it doesn’t overcook. After the steak has rested, slice it diagonally across the grain and serve as tacos or a steak salad.


Each package of Plumb Rocky Farm skirt steak weighs about a quarter of a pound which is enough for one person.
